Citric acid finds its application in the production of beverages, jams, candied fruit, fruit syrups and baked confectionery products. In the food industry it is also used as an acidifier or acidity regulator.
Citric acid also helps to increase the compactness of the jelly in jams and its presence in the fruit delays the oxidation of the pulp, preventing it from browning; the same goes for preserved meats.
