Xanthan gum is a dietary fiber obtained by fermentation of carbohydrates with Xanthomonas campestris strains. The powder is made up almost entirely of polysaccharides, it is soluble in water with which it forms a very dense compound.
The product is used in the culinary field as a thickener and stabilizer in various foods such as sauces, gravies, jellies and confectionery products, significantly increasing both the overall volume and consistency.
